Biskut Red Velvet dengan White Chocolate Chip

Sepanjang 34 tahun hidup di muka bumi, tahun ni baru first time nak buat kuih raya sendiri. Bukan tak pernah buat, tapi dulu masa darjah 2-4 rajin tolong makcik kat Penang "gelintey" kuih raya. Masa tu bisnes kuih raya sangat rare, and she was making RM30-40k easily by selling kuih raya alone. But that was around 25 years ago.

Fast forward, I finally decided to make my own batch of kuih raya (oh praise Allah the Almighty I am becoming more of a woman! hahahaha). Well to be honest, salah satu sebab tak minat buat kuih raya sbb kena tunggu kuih raya tu siap batch by batch. Kalau buat pie, kek, pastry ke apa tak payah melanguk depan oven tu. Tapi disebabkan kuih raya ni sangat renyah nak dibuat, jadi saya tak pernah terpanggil rasa nak buat sendiri. Selama ni memang buat kuih 'tunjuk' jer.

Tapi memandangkan sebalang kuih dah sampai rega RM27-35, jadi saya ambil keputusan (yang bijak) untuk buat kuih raya sendiri. Tapi saya lupa yang saya hanya ada satu sahaja tray dan cooling rack. Maka, orang lain buat satu batch kuih dalam sejam, saya ambil masa selama 4 jam setengah! Dah la bulan puasa ni kak oiiiii. Start dari 630pm dah start whisking, stop bukak puasa sat, sampai la kul 1130 baru habis buat satu dough.  Itupun, masa last batch tu dah tak larat sangat nak tunggu, pi baring sat kat bilik. Taktau la macam mana boleh pulak terlena! Tetiba je tersedar sendiri, terus lari tengok oven. Tapi tak payah lari pun dah tau dah hangus sbb bukak pintu bilik je dah bau hangus semerbak satu rumah hahaha!! There goes my last batch of the dough...

Tapi, saya bangga dengan diri sendiri di atas kerajinan dan ketekunan membuat kuih tahun ni. Walaupun hanya berbekalkan seketul tray dan seketul cooling rack, saya gagahkan juga buat kuih raya (walaupun half way tu dah rasa nak nangis dah maki diri sendiri ckp "why the hell did I sign up for thissssss???!!!). Tapi mau tak bangga weh, save duit RM27! (padahal beli baju beratus2 taknak pulak insaf haha).

Ok, kot la ada sesapa nak buat lepas ni, boleh la amik resepi sini. Insya Allah sedap.



Ingredients
2 1/4 cups all-purpose flour
2 1/2 Tbsp cocoa powder*
1 1/2 tsp cornstarch
3/4 tsp baking soda
1/2 tsp salt
8 Tbsp butter, at room temperature
6 Tbsp all vegetable shortening, at room temperature
1 1/2 cups granulated sugar
1 large egg
1 large egg yolk
1 1/2 tsp white vinegar
1 1/2 tsp vanilla extract
1 Tbsp red food coloring
1 1/3 cups white chocolate chips, divided


Directions
1. Preheat oven to 375 degrees. In a mixing bowl, whisk together flour, cocoa powder, cornstarch, baking soda and salt, set aside. 

2. Add butter, shortening and sugar to the bowl of an electric stand mixer and mix on medium speed until very pale and fluffy about 4 minutes. 

3. Add egg and egg yolk and mix until combine. Add vinegar, vanilla and food coloring and mix until well blended. Slowly add in dry ingredients and mix just until combine. 

4. Mix in 1/2 cup white chocolate chips. Scoop dough out by the heaping tablespoonfuls (about 1 1/2 Tbsp) and roll into balls and place on buttered or lined cookie sheets. Gently press about 6 white chocolate chips into the top of each cookie, being careful not to flatten the cookies (if you do flatten them a bit just reshape them to the height they had before adding the chips) 

5. Put the tray in the fridge for 20 mins to let the dough cool before baking. This is to make sure the cookies wont be flat during baking time.

6. bake in preheated oven 8 – 9 minutes. Allow to cool several minutes on baking sheet before transferring to a wire rack to cool. Store cookies in an airtight container.
